Ingredients:
1 egg
70 g flour
45 g sugar
20 g chopped almonds
1 teaspoonful of cocoa
40 g butter
4 spoonfuls of warm milk
1/2 teaspoon yeast
1 pinch of salt
1 teaspoonful of orange flavouring
icing:
125 g icing sugar
10 g egg whites
10 g lemon juice

Method:
Beat the egg, sugar and soft butter together.
Add the milk, add the orange flavouring and incorporate the flour, yeast and salt. Then add the almonds. Add a generous spoonful of the cake mixture to the sieved cocoa. Pour the cocoa mixture into the mould in separate areas (no need to grease the cake tin beforehand if using a silicon mould) and complete with the yellow mixture. Smooth the surface and place in the oven at 170°C for 20/22 minutes. When the cake is ready, remove from the oven, wait 5 minutes and then remove from the mould and place on a rack to cool. Sieve the icing sugar in a bowl, add the egg white and the lemon juice. Whisk well and then transfer the icing to a cone of greaseproof paper, cut the tip and draw the outlines and details of the cow as shown in the photo. Draw the eyes and mouth using a pastry brush.
